Makes 4 servings
1/2 c. butter, divided
8 thin slices bread, crusts removed
4 large thin slices ham
4 slices sweet onion
8-oz. pkg. shredded Cheddar cheese
4 eggs, beaten
salt and pepper to taste
On a large griddle, melt half the butter; fry 4 slices of bread on one side until golden. Remove from griddle and place slices uncooked sides down. Place a slice of ham, a slice of onion and 1/2 cup cheese on each piece of bread. Place the other slice of bread on top of each stack, with the cooked side down. Whisk eggs with a little salt and pepper; coat outsides of sandwiches with eggs. Melt remaining butter on the griddle; fry sandwiches on each side until golden. Slice each in half diagonally; serve immediately.
