Serves 8
2 10-oz. tubes refrigerated pizza crust
1/2 lb. sliced baked ham, divided
1/4 lb. sliced hard salami
1/4 lb. sliced pepperoni
1/4 lb. sliced mozzarella cheese
1/4 lb. sliced provolone cheese
1/4 lb. sliced American cheese
1 c. sliced mushrooms
1/3 c. hot pepper rings
1 onion, sliced
Roll crusts out on a lightly greased baking sheet to completely cover the bottom. Layer 1/4 pound meat, a cheese and then a vegetable; continue for 3 layers, ending with a layer of remaining ham. Fold dough back over top, envelope-style; pinch edges closed, making sure all ingredients are tucked inside. Bake at 425 degrees until golden, about 17 to 25 minutes; let stand 5 to 10 minutes before slicing.
For an elegant yet quick last-minute appetizer, toss a drained jar of Italian antipasto mix with bite-size cubes of mozzarella or provolone cheese.
