Makes 8 servings
2 6-oz. cans tuna, drained
1/2 c. sliced water chestnuts, chopped
1/2 c. green onion, chopped
1/3 c. red pepper, chopped
Optional: 4 eggs, hard-boiled, peeled and chopped
1/2 c. mayonnaise
4 8-inch flour tortillas
2 c. romaine lettuce, shredded
Combine all ingredients except tortillas and lettuce; spread on tortillas. Sprinkle with lettuce and roll up each tortilla tightly. Slice in half diagonally; wrap in plastic wrap and refrigerate up to 3 hours before serving.
Try using colorful flavored wraps and tortillas for roll-ups...sun-dried tomato-basil, garlic-herb or cilantro really give them a zippy new taste.
