Italian Sausage Sandwiches

Serves 4

4 t. butter, softened

4 hoagie rolls, split

garlic powder to taste

1 lb. Italian pork sausage links

1 green pepper, sliced

1 onion, sliced

8-oz. pkg. shredded mozzarella cheese

Spread one teaspoon butter on each roll and sprinkle with garlic powder; place on an ungreased baking sheet butter-side up. Bake at 350 degrees until lightly toasted; set aside. Brown sausages in a large skillet over medium heat until cooked through; remove from heat. Add green pepper and onion to skillet; cook until tender, 2 to 3 minutes. Arrange sausages in rolls; evenly top with green pepper, onion and cheese. Place on baking sheet; bake at 350 degrees until cheese is melted, about 5 minutes.

Stem and seed a green pepper in a flash...hold the pepper upright on a cutting board. Use a sharp knife to slice each of the sides from the pepper. You’ll then have four large seedless pieces that can easily be chopped!
