Makes one serving
1 t. butter
2 10-inch flour tortillas
1/3 c. shredded Cheddar Jack cheese
2 slices bacon, crisply cooked and crumbled
1/2 tomato, chopped
1 to 2 t. onion, chopped
fajita seasoning to taste
Melt butter in a skillet over medium heat; add one tortilla and cook until golden. While tortilla is still in skillet, sprinkle with cheese, bacon, tomato, onion and seasoning. Top with remaining tortilla; turn carefully and cook until golden and cheese has melted. Slice into quarters to serve.
A pizza cutter is oh-so handy for slicing cheesy quesadillas into wedges...clever!
