Sausage-Spinach Pitas

Makes 12

1 lb. ground Italian pork sausage

10-oz. pkg. frozen chopped spinach

2 c. shredded mozzarella cheese

1/8 t. nutmeg

12 mini pita rounds

In a large skillet over medium heat, brown sausage. Add spinach and cook until spinach is thawed; drain. Add cheese and nutmeg; toss. Spoon into pita rounds and place them on an ungreased baking sheet. Bake at 350 degrees for 20 minutes, or until hot.

To grate or shred a block of cheese easily, place the wrapped cheese in the freezer for 10 to 20 minutes...it will just glide across the grater!
