Serves 4
4 roma tomatoes, peeled and sliced
1/2 c. crumbled feta cheese
2 T. lemon juice
1/4 c. olive oil
salt and pepper to taste
4 boneless, skinless chicken breasts, grilled and sliced
4 whole-wheat flat breads
Garnish: Yogurt Sauce (see tip below), lettuce, Kalamata olives, sliced red onion
Combine tomatoes, cheese, lemon juice and oil. Sprinkle with salt and pepper. Fold in chicken; arrange in flat breads. Top with Yogurt Sauce; garnish with lettuce, olives and onion.
Cool Yogurt Sauce is delicious in wraps. Use a fork to mash together a minced garlic clove, 3 tablespoons chopped walnuts and one teaspoon olive oil. Stir into a 16-ounce container of plain yogurt. Add salt & pepper to taste and chill.
