This makes a great hors d’oeuvre even if you’re not on the down day of your diet.
3 Belgian endive leaves
2 tablespoons soft low-fat goat cheese (see Note)
1 tablespoon plain nonfat yogurt
Freshly ground black pepper,
to taste
2 tablespoons diced fresh tomato
1 tablespoon shredded fresh basil
Rinse the endive thoroughly and dry well. Combine the goat cheese and yogurt in a small bowl. Season with pepper. Divide cheese mixture among the endive leaves and arrange on a plate. Top with the tomato and basil.

Note: Look for low-fat goat cheese in well-stocked supermarkets and specialty stores. Trader Joe’s has an excellent one—full of tangy flavor. You won’t miss the fat.
