The small amount of coconut juice in this recipe adds a creamy flavor and only about 20 calories.
1 cup chopped cantaloupe or other melon
1/2 cup crushed ice
1/4 teaspoon grated fresh ginger,
or to taste
1/4 cup coconut juice with pulp
(see Note)
Combine all the ingredients in a blender and puree.

Note: Coconut juice is the low-fat liquid, usually containing bits of soft pulp, found inside a green or young coconut. It is different from the coconut milk made from mature coconut pulp. You can find canned coconut juice in Latino markets and natural food stores. If unavailable, substitute an equal quantity of water and a dash of coconut extract.
