WATERMELON AND TOMATO SALAD WITH GOAT CHEESE

This combination may sound odd to you, but once you try it you’re sure to love it.

2 cups mixed salad greens

1 Roma tomato, quartered

6 (1-inch) watermelon cubes

2 tablespoons low-fat goat cheese, crumbled

2 tablespoons low-fat balsamic vinaigrette dressing, such as Newman’s Own

Arrange the greens on a plate. Top with the tomato, watermelon, and goat cheese. Drizzle with the vinaigrette.
