Makes 2 servings
Call them garbanzos or chickpeas, they’re still delicious—and oh so good for you.
1 cup cooked or no-salt-added canned garbanzo beans, drained and rinsed
1/4 cup low-fat vinaigrette dressing of your choice
1 teaspoon minced garlic
Salt and freshly ground black pepper, to taste
3 cups baby spinach leaves
2 Roma tomatoes, cut into wedges
1/2 small red onion, cut crosswise into rings
In a large bowl, toss the beans with the vinaigrette and garlic. Season with salt and pepper. Add half the spinach and toss to combine. Add the remaining spinach and the tomatoes and toss again. Divide the salad between two plates and top with the onion rings.
