Couscous is a tiny semolina pasta that is the North African answer to rice. Find it in the same aisle as pasta and rice in your local supermarket.
11/2 cups lightly packed baby spinach leaves
1 cup bite-size pieces romaine lettuce
1/2 English or greenhouse cucumber, unpeeled, sliced
1/2 small red onion, sliced crosswise into thin rings
1/2 cup cooked couscous (about
1/3 cup dry), preferably whole-wheat
1/4 cup store-bought light ranch dressing
Combine the vegetables and couscous in a large bowl. Toss with the dressing, divide between two plates, and serve.
