Makes 2 servings
Using a store-bought low-fat Asian-style dressing makes this salad a quick meal.
1 (8-ounce) package shirataki tofu noodles, drained, cut into bite-size pieces, prepared according to package directions, and drained again (see Shirataki tofu noodles)
1 (5-ounce) bag salad greens
1/4 pound snow peas, blanched until crisp-tender
1 bunch radishes, trimmed and thinly sliced
1/4 cup low-fat sesame-ginger vinaigrette, preferably
Newman’s Own
Rinse the noodles in cold water and drain well. Combine the greens, snow peas, radishes, and noodles in a large bowl. Toss with the salad dressing, divide between two plates, and serve.

Note: When combining several cups of salad greens with dressing, it is often easier to toss half the greens and dressing, then add the remaining greens and dressing and toss again.
