SOFT FISH TACOS

Makes 2 servings

Try these tasty, tangy tortillas to add some spice to your down days.

2 (6-ounce) cod or other white fish fillets

4 corn tortillas

1/2 cup store-bought green or red salsa

2 cups shredded lettuce

1/4 cup thinly sliced red onion

1/2 cup thinly sliced radishes

2 tablespoons fresh cilantro leaves

Bring a shallow pot of lightly salted water to a simmer over medium-low heat. Add the fish and simmer (do not boil) until it is opaque and flakes with a fork, about 10 minutes after the water returns to a simmer. (If the fish is frozen, double the cooking time.) Remove with a spatula and drain.

Heat the tortillas in the microwave for about 30 seconds, until softened. Divide the fish among the tortillas. Top with the salsa, lettuce, onion, radishes, and cilantro.
