Makes 2 servings
Lemon and capers are a classic flavor combination.
2 (6-ounce) trout fillets
2 tablespoons capers, rinsed and chopped
2 tablespoons freshly squeezed lemon juice
Salt and freshly ground black pepper, to taste
TO SERVE:
2 cups broccoli florets, steamed until crisp-tender
Spray a large nonstick skillet with cooking spray and heat over medium heat. Add the trout and cook until browned on the bottom, about 5 minutes. Carefully turn the trout and add the capers and lemon juice. Season with salt and pepper, cover, and continue cooking until the trout is opaque and flakes with a fork, about 5 minutes. Transfer the trout and broccoli to two plates and serve.
