Making chili with turkey and white beans gives it a new twist. The great thing about spices is that they add a lot of flavor without any calories.
6 ounces extra-lean ground turkey
1/2 cup chopped onion
1 garlic clove, minced
1/2 cup seeded and chopped green bell pepper
1 tablespoon minced serrano chile, or to taste
1 (14.5-ounce) can no-salt-added diced tomatoes with juice
1 (15-ounce) can white beans such as cannellini, navy, or great northern, drained and rinsed
1 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Combine the turkey, onion, and garlic in a large saucepan and cook over medium heat, stirring to break up the meat, until the turkey is browned. Add the bell pepper, chile, tomatoes with their juice, beans, water, chili powder, cumin, oregano, and basil. Reduce the heat, cover, and simmer until the onion is tender, about 20 minutes.
