Braised Beef Short Ribs

Braised beef short ribs can be prepared a number of different ways. The most common is with traditional green curry. First, the short ribs are removed from the bone and pan seared. They are then marinated in green curry and coconut milk for six to 24 hours. After this, the ribs are braised in a wok with green curry and served with vegetables, usually Thai eggplant (which resembles a green tomato), onions and tomatoes. The dish is usually garnished with a large sprig of basil and sometimes crushed peanuts or tree nuts. Additional ingredients may include cardamom, coriander, cumin, fish sauce, galangal root, garlic, lemon grass and sliced Thai chili pepper. The result of this process is beef so tender and savory, a fork slices through it with ease.
