In Europe waffles are a sweet treat – the honeycomb pattern being a great carrier for syrup, whipped cream and oozing chocolate sauce – whilst in America I had them for breakfast. Four waffles served with scrambled eggs, bacon, ketchup and maple syrup certainly sets you up for the day. My recipe below is for plain waffles and they can be topped with whatever takes your fancy, whether you choose to serve them European- or American-style. You will need to have a waffle iron or maker for this recipe.

  1. In a large bowl, mix together the flour, baking powder, salt and sugar.
  2. In a separate bowl or jug, beat the eggs with the milk. Gradually pour the mixture on to the dry ingredients and beat until you have a smooth batter. Finally, stir in the melted butter.
  3. Heat your waffle iron or maker and spray it with oil. Once the iron is hot, pour a ladleful of batter on to the waffle iron and cook until golden. Repeat with the remaining batter. Serve warm.
