Instant No-Knead Pizza and Bread Dough

This instant no-knead dough is a wondrous, versatile thing: Rolled out immediately, it is ideal for pizza bases; left for a short rise, it is the base for a satisfying pinwheel loaf recipe. My preference is usually for active dry yeast, which I always use for recipes that call for a serious rise: I love the ritual and assurance of watching the fragrant yeast bubbling away as it proofs. But because the pizza base makes a fairly thin crust, there is no need for it to rise, so I go for instant yeast that can be added directly to the flour for that essential yeasty flavor, and a small rise activated in the heat of the oven that gives a little flexibility to the cooked base. The dough can of course be set to rise for breads or thicker pizza bases or stored in the refrigerator for up to 5 days to create a dough with a great deal of character, almost mimicking a sourdough bread, with that welcoming, lactic, fermented aroma and more developed yeast flavor.
