Golden Baked Frittatas

Eggs are such an incredible gift of nature, and this Italian dish—think a crustless quiche without all the cream, or a more structured omelet—is one of the easiest ways I can think of to feed my friends and family a wholesome, light lunch at a moment’s notice. The onions, sweated slowly with butter until soft and translucent, are for me an essential base to build upon for texture and flavor. Then it’s merely a question of choosing the fresh herbs, cheese, vegetables, or citrus zest that inspires you that day—the number of variations is unlimited!
