Cèpe-Nori Powder

MAKES ABOUT 2-1/2 TABLESPOONS


       EQUIPMENT: An electric spice mill.

        Large handful dried cèpe (porcini) mushrooms (about 10 g)

        1/2 sheet dried nori seaweed, torn into small pieces

        1/4 teaspoon sea salt

        1 tablespoon plus 1 teaspoon dried bonito flakes

Grind the ingredients to a fine powder in the spice mill.
