Cèpe-Sesame Powder

MAKES ABOUT 1/4 CUP (4 TABLESPOONS)


       EQUIPMENT: A electric spice mill.

        Small handful dried cèpes (porcini) mushrooms (about 5 g)

        1/4 sheet dried nori, torn into small pieces

        1/4 teaspoon fine sea salt

        1 tablespoon plus 1 teaspoon dried bonito flakes

        2 tablespoons sesame seeds

Place the dried cèpes, nori, salt, and bonito flakes in the spice mill and grind to a fine powder. Add the sesame seeds and pulse briefly to blend.
