I keep vanilla powder on hand for sprinkling over desserts such as cherry clafoutis or for showering over just about any flavor of sorbet or ice cream.
When the seeds are removed, I let the vanilla pods dry on a windowsill until completely dried out, about 1 week.
MAKES 1/4 CUP (4 TABLESPOONS)
EQUIPMENT: An electric spice mill; a small jar with a lid.
4 vanilla bean pods with seeds previously removed, dried
With a large knife, coarsely chop the dried beans. Place in the spice mill and grind to a fine powder. Store in the jar with the lid securely tightened in a cool, dry place for several months.
