Compound Butters

       A refrigerator or freezer stocked with just a few infused butters can change a cook’s life, adding new dimensions to just about any dish or slice of naked toast waiting to be dressed with flavors of the sea, the earth, the garden. Let your imagination go wild! Here are some suggestions.

Tips

•  Use the best-quality butter you can afford, preferably from grass-fed cows.

•  Store compound butter in the refrigerator for up to a week, or in the freezer for up to 2 months. Make sure you wrap it well in baking parchment and protective plastic wrap to avoid freezer burn. To use, remove from the freezer, let soften at room temperature (about 15 minutes), slice off as much as you need, and return the rest to the freezer.
