Great with Bacon-Cheese New Potatoes

Original recipe yields

4–5 servings

Cooking day instructions

Score steak on both sides. Place in freezer bag. Combine oil, vinegar, garlic, salt, and pepper. Pour over meat. Let meat mixture stand at room temperature for 2 hours, then freeze, using freezer bag method.

Serving day instructions

Thaw completely. Remove meat from marinade. Broil steak in oven, 3 inches from heat, for 3–4 minutes per side. Meat may also be grilled. Carve into thin slices across the grain and serve.

Hint

This steak is wonderful served with the following red wine and mushroom sauce.

Red Wine and Mushroom Sauce

1 cup fresh mushrooms, sliced

¼ cup green onion, sliced

2 T. butter or margarine

1 T. cornstarch

½ cup dry red wine

Yield: 4 servings

2 T. snipped parsley

1 t. instant beef bouillon granules

¼ t. salt

½ cup water

dash of pepper

In medium saucepan, cook mushrooms, onion, and butter 4–5 minutes. Stir in cornstarch. Add wine, parsley, bouillon, salt, water, and pepper. Cook and stir until thick and bubbly. Makes 11 cups.
