A salsa-based version of fajitas
Original recipe yields
4–6 servings
Cooking day instructions
Cut steak in half lengthwise, then cut in thin strips across the grain. Brown meat well in oil. Remove meat from pan and add more oil if necessary. Sauté green pepper and onions; drain fat. Return meat to pan and add salsa and water. Cover and simmer 10 minutes. Add tomatoes. Freeze, using freezer bag method.
Serving day instructions
Thaw completely. Cover and simmer on stovetop until heated through. Serve this meal as you would fajitas. Place meat in tortillas with lettuce, sour cream, cheese, rice, or condiments of your choice.
Substitution
The above recipe is very good with chicken substituted in place of the steak.
