In large bowl, combine sugar, butter, egg yolk, and almond extract. Beat until light and fluffy, approximately 2–3 minutes. Gradually add flour and cocoa until well mixed. Shape (see hint below) and place 1 inch apart on cookie sheet. Bake at 375 degrees on ungreased cookie sheets for 7–9 minutes or until set. Cool completely. Freeze, using instructions for baked goods.
Hint
Cookie dough may be shaped into balls or squares, or dough may be put in a cookie press to form desired shapes.
