Breakfast Burritos

A hearty meal for breakfast on the run

Cooking day instructions

In large skillet, brown sausage. Remove from heat and drain excess fat. Set aside. Brown potatoes in oven by placing on cookie sheet and broiling according to package directions until crisp. Meanwhile, mix eggs, milk, salt, and pepper together in medium mixing bowl. Over medium heat, melt butter in separate large skillet. Add egg mixture to skillet and scramble eggs, removing from heat once eggs are cooked but still moist. Warm green chili over medium heat in saucepan until heated through.

To assemble burritos: Warm flour tortillas on skillet or griddle until flexible, turning once. Fill tortillas with 1 cup scrambled eggs, 2–3 T. sausage, and 1 cup potatoes. Top with cheddar cheese and green chili according to taste. Fold filled tortillas into burritos. Wrap each burrito in plastic wrap, then place individual burritos in freezer bags. Freeze.

Serving day instructions

Remove individual burritos from freezer. Place frozen burrito in microwave, and heat on high setting for 2–3 minutes or until heated through. If additional heating is needed, warm on high by 30-second increments.

Substitutions

Red salsa may be substituted for green chili. Turkey sausage may be substituted.
