Cooking day instructions

In large bowl or food processor, combine flour, 1 cup sugar, nutmeg, baking powder, and salt. Cut butter into flour mixture until crumbly. In small bowl, beat egg and milk and add to flour mixture. Blend until dough forms a ball. Pat dough into disposable pie pan.

With electric mixer or food processor, blend cream cheese and ¼ cup sugar. With mixer running, add egg yolks and vanilla and blend until smooth. Spread evenly over crust. Layer apples over cream cheese mixture, in circular pattern, slightly overlapping slices. In small bowl, combine remaining 1 cup sugar, cornstarch, and cinnamon and sprinkle over apples. Cover pie plate tightly with plastic wrap and then foil. Label.

Serving day instructions

Thaw. Bake 30 minutes at 350 degrees. Reduce oven temperature to 300 degrees and continue baking 10 more minutes or until golden brown.

Hint

Crust is better if made in smaller batches. It can be doubled with good results, but if making x4, make 2 batches of dough and divide filling and topping. If you overwork dough, it becomes tough.
