Cooking day instructions

Mix 1½ cups sugar, cornstarch, cinnamon, and almond extract. Add fresh fruit to mixture, place in freezer bag, and freeze, using freezer bag method.

Serving day instructions

Thaw fruit filling. Pour into greased 9x13 baking dish. For topping, mix sugar, flour, and baking powder. Beat egg and mix with flour/sugar mixture until crumbly. Sprinkle over fruit. Melt margarine and drizzle over top. Bake at 350 degrees for 45–60 minutes, until light brown.

Hint

For an easy way to peel peaches, plunge them in boiling water for 1–2 minutes, then in cold water. The peels will slide right off!

Substitution

Other fresh fruit, such as cherries, apples, or berries, may be substituted for the peaches. The amount of sugar in the filling may need to be adjusted, depending on the tartness of the fruit.
