Weight-to-Volume Equivalencies for GF Flours
Different brands of wheat flour all contain the same ingredients so they measure out the same. However, different gluten-free flour brands contain different ingredients, which will pack differently. For this reason, weight-to-volume equivalencies vary from brand to brand, as you can see from the information below.
You can easily avoid this problem (and never look at this chart again), if you simply weigh your flour (this is how our recipes are written). Ten ounces of gluten-free flour blend is the same, no matter the brand. If you decide to measure flour by volume, the G-F Testing Lab feature will give you the relevant conversion information.
This chart will be helpful if you’re trying to rework another recipe (not in this book) and you’re using either our homemade blend or flours made by King Arthur or Bob’s Red Mill. Click here for more details on why we recommend these two brands if you decide not to make our homemade blend.
