The long cooking times here are deceptive because these recipes are ultra-easy to prepare. With few exceptions, everything goes into one pot and cooks largely unattended. It’s also true that almost all of these dishes taste as good or even better rewarmed the next day. And remember that lentils cook in less than 45 minutes.
