Adding Grated Vegetables to Quick Breads

Vegetables add flavor, color, moisture, and texture to muffins and quick breads. Shredded root vegetables work best; use about 1 cup per recipe. Each one favors its own seasonings, though it’s fun to mix and match; here are a few of my favorite combinations:

VEGETABLE

ADD or Substitute

Beets

Substitute honey for up to half of the sugar

Carrots

Substitute brown sugar for the granulated sugar

Celery root

Add 1 tablespoon grated lemon zest; or use ½ cup shredded apple and ½ cup shredded celery root for more complex flavor overall

Parsnips

Add 1 teaspoon ground cinnamon, ¼ teaspoon ground ginger, and ¼ teaspoon freshly grated nutmeg

Sweet potato

Substitute maple syrup for up to half of the sugar

Zucchini

Add 1 tablespoon grated orange zest
