Teriyaki Sauce

Familiar and widely loved, teriyaki sauce is also fast and simple. You can slather it on broiled or deep-fried tofu, add it to stir-fried vegetables (which in turn can be served over rice or noodles), or use it as a ketchup replacement on any of the veggie burgers on pages 502 to 508 — or anywhere else, for that matter.

Put the soy sauce and mirin in a small saucepan. Heat over medium-low heat until bubbling, about 2 minutes. Turn off the heat and stir in the ginger, garlic, and scallions. Serve, or cool, cover, and refrigerate for up to a day. Bring to room temperature before serving.
