⸭ Crusty Wheels
“Serve them forth hot
in a dish at Lenten time. . .”
⸭ 2 cups flour
⸭ 3 eggs
⸭ dash of salt
⸭ pinch of saffron
⸭ olive or vegetable oil (for frying)
Put the flour in a mixing bowl. Beat the eggs, saffron, and salt and pour into the flour. Mix well, adding a little more flour if the mixture seems too wet, or a little water if too dry. Separate the dough into balls about a half-inch in diameter and then roll them out as thinly as possible, until they are about 2 to 3 inches in diameter. Fry in hot oil until the edges turn brown (about 3 minutes), then flip and continue frying until golden brown (about another 2 minutes). Best served hot, as a kind of before-dinner cracker. May also be sprinkled with powdered sugar or with sugar and cinnamon for a sweet treat. Makes 12 to 15 wafers.

These “wheels” would have been about the same size as a medieval communion wafer, making them a good food to eat during Lent as a reminder of Christ’s death.
