⸭ sage
⸭ garlic greens
⸭ scallions
⸭ lettuce
⸭ leeks
⸭ spinach
⸭ mint
⸭ green onions
⸭ fennel

⸭ purslane
⸭ watercress
⸭ primroses
⸭ violets
You may not be able to find all of these ingredients, but do what you can! The exact amounts of each don’t matter, so simply use your judgment. Rinse leaves and remove stems. Tear the leaves into small pieces with your hands, and mix them well with oil, vinegar, and salt. The flowers can be sprinkled on the top as a garnish or mixed in with the other ingredients. Other edible flowers include begonia, nasturtium, chrysanthemums, clover, honeysuckle, and hollyhocks.
Life’s sweet variety nourishes our hearts.

Salad was a typical starter for medieval meals whenever fresh leaves were available. Loaded with herbs and flowers, as well as greens, it was a rich source of vitamins.
