MEDIANOCHE

Found mostly in Florida where the culinary heritage is Cuban, the medianoche is a variation of the Cuban sandwich made on lighter-weight, egg-enriched bread (known as pan medianoche) rather than the typical French loaf. Like a Cuban, it contains ham and roast pork, cheese, pickles, mustard, and mayo and is toasted inside a plancha so that all the ingredients meld together. The sweet bread develops a fine crunch and the whole sandwich is significantly less filling than a traditional Cuban, making it an ideal wee-hours snack. That is how it gets its name: medianoche means “midnight” in Spanish.
