SCRAMBLED DOG

Scrambled dog means two different but related things in southern Georgia. At most of the lunch counters that serve it, the scrambled dog is a bright red hot dog in a toasted bun topped with meat-and-bean chili that includes a full measure of chopped onions. A few places quite literally scramble the dog by cutting it into pieces and mixing it with the chili, condiments, oyster crackers, and slices of dill pickle. At Dinglewood Pharmacy in Columbus, scrambled dogs are presented in a shallow rectangular dish with a long-handled spoon sticking out from under everything. The spoon is essential, as no bun is included.
