Although it resembles a weiss-wurst, the beloved white hot of upstate New York plays the role of a hot dog, served in a bun and frequently topped with chili. Originally devised by a Rochester butcher shop in the 1920s as an alternative to red hots, made with uncured (hence white) pork and veal (and even sometimes also beef), the white hot is today mostly (if not all) pork, earning it the local nickname porker. The Buffalo Bills of the National Football League have deemed the white hot their official hot dog.
Upstate New Yorkers refer to their beloved white hots as porkers. Need we mention that they are not kosher?
