Cacao oil/butter (otherwise known as cocoa butter or cocoa oil) possesses the useful qualities of having an aphrodisiac smell, high antioxidant levels, skin protective qualities, a melt point at just below the temperature of the human body and resistance to rancidity.
The oil/butter of cacao is a treat for our sense of smell. It is agreeable to our tastes and highly nutritious. It has been used as a substitute for, or an alternative to, cod-liver oil, and as an article of diet during the last days of pregnancy. It works great on the lips and makes one feel beautifully chocolatey! Due to its high antioxidant level, it has been used as a primary ingredient in suntan lotions for many years. It has also been employed in the formation of suppositories and pessaries for rectal, vaginal and other applications. It is in many preparations for rough or chafed skin, chapped lips, sore nipples, lotions, various cosmetics and soaps.
On the Composition of Cacao Butter — Kingzett announced in 1877 the isolation of two fatty acids; one was named theobromic acid, and was stated to have the formula C64H128O2. Vander Becke in 1880 endeavoured to prepare the latter, but without success. The subject was investigated by M. C. Traub, who examined five samples of oil of theobroma, two of which he himself had prepared. After saponification, the acids were ascertained to be completely precipitated by magnesium acetate. By repeated fractional precipitation it was proven that the oil consists of the glyceryl esters of oleic, lauric, palmitic, stearic and arachic acids. The solid consistency of the oil and its low melting point are most likely due to the peculiar proportions in which these compounds are combined resembling in this respect the behaviour of certain metals (reference: Archiv d. Phar., Jan., 1883, p. 19-23).

When purchasing processed chocolate, one should look to see that it meets some, or all, of the following criteria:
• Organic
• No dairy
• No genetically modified soy lecithin (the label must say “organic” or non-GMO soy lecithin)
• 70%+ cacao content. (It is legal to call 41% cacao content a dark chocolate which allows manufacturers room to hide defects and poor quality beans).
• “Single Origin” — chocolate made with cacao beans from a particular country or area.
• “Single Estate” — chocolate made with cacao beans from a single estate. Sometimes called “Estate Grown” or “Terroir style” meaning, “the taste of the place.”
• “Single Variety” — chocolate made exclusively from one particular cacao bean type (ie. Criollo)
Good processed chocolate melts slowly in your mouth, delivering a blend of flowers, fruit, spice, nuts, with undertones of good tobacco. If you taste acids, grass, mold, rubber, smoke, and/or straw, you know there were troubles in growing, processing, and/or storage.
The products listed below are raw and organic (free of pesticides and chemical fertilizers). Beware of non-organic cacao beans (nibs). In the U.S. it is a law and common practice to fumigate cacao being imported into the country. Essentially, non-organic cacao has been fumigated. We strongly promote organic agriculture. Also, our particular organic cacao beans (nibs) have low microbe counts on the skin, therefore you can eat the skin and avoid peeling.
