This lovely recipe contains a broad spectrum of skin-loving nutrients so you will get your skin-nourishing-day off to a flying start.
Per Bowl
4 tablespoons porridge oats
1 tablespoon chopped walnuts
1 tablespoon chopped Brazil nuts
1 tablespoon pumpkin seeds
Nice and easy. Combine all the ingredients into a bowl and serve with rice milk or natural live yogurt. You could even scatter a few blueberries over to bump up the nutrient levels… not that it needs it!
This is my all-time favourite breakfast! I eat it at least 4 or 5 times a week. It is seriously nutrient-dense, tastes amazing, and is really rather a decadent affair too!
2 eggs
hollandaise sauce (OK, I admit it, I tend to buy a fresh readymade one, but feel free to make your own if you want)
½ wholemeal English muffin
2–3 slices of smoked salmon
1. Crack both eggs gently into a pan of boiling water, and poach for 3–4 minutes.
2. Warm the hollandaise sauce in a small pan.
3. Toast the half muffin. Place the smoked salmon slices onto the toasted muffin.
4. Place the poached eggs on top of the salmon slices.
5. Top the whole lot with enough hollandaise sauce to cover it well.
This is a quick and easy morning smoothie that you can just pour into a container and run out the door with. Convenience is always good.
2 handfuls of frozen mixed berries
200 ml/7 fl oz rice milk or almond milk
1 scoop of whey protein powder (vanilla works best here)
2 tablespoons flax seed oil
Place all the ingredients into a blender, and blend into a thick luscious smoothie.
This is a gorgeous dish. Be warned though, it’s only for those days when you are very hungry as it is one of those dishes that will fill you up until lunch time.
2 handfuls of baby spinach leaves
3 eggs
80 g/3 oz feta cheese, cubed
1. Add the baby spinach to a pan with a little olive oil and sauté until it wilts.
2. Crack the eggs into a bowl, and whisk them with a fork.
3. Add the eggs to the pan with the spinach on a high heat, and stir continuously. As soon as the first signs of scrambled egg start to appear, throw in the cubed feta and continue stirring. Once all of the egg is scrambled, it is ready to serve.
