Baked Coconut Tenders
Pair with roasted veggies! Makes 10 tenders.
Ingredients:

6 chicken tenders
•
2-3 eggs
•
3/4 cup breadcrumbs
•
1 cup all-purpose flour
•
11 cups flaked coconut
•
Olive oil for drizzling or spraying
Directions:
First, preheat oven to 400 and line baking tray with foil or parchment paper.
Set up 3 bowl breading station.
Bowl 1 whisk together eggs; bowl 2 whisk together flour breadcrumbs; bowl 3 coconut flakes
Next, dip tenders into egg and shake off excess.
Dip tenders into flour breadcrumbs, shake off excess.
Dip tenders into flakes, shake off excess.
Place on baking tray, spray or drizzle with olive oil, cook 20-30 minutes.
