Spicy Chicken and Rice
Try air frying the chicken pieces! Makes 2 servings.
Ingredients:

1 tbsp e.v. olive oil
•
1 shallot, minced or grated
•
1 tsp garlic, minced or grated
•
2 green chilies diced
•
1/3 cup crushed pineapple
•
1 diced dried red chili
•
2 diced scallions
•
½-1 cup shredded chicken
•
2 tbsp pineapple juice
•
½ tsp pepper
•
2 cups cooked rice
•
1 tbsp diced parsley
Directions:
Preheat oven to 350, prepare a 9x9 dish.
Warm pot over medium high heat then add e.v. olive oil.
In pot sauté onion, garlic, green chilies, crushed pineapple, red bell pepper, scallions, chicken.
Sauté 1 minute.
Add in juice and pepper. Mix in well.
Sauté 30 seconds.
Fold in rice.
Transfer to plates and top with parsley.
