Fried Plantains
Delicious! Makes 12-14 plantains pieces.
Ingredients:

3 plantains cut into pieces 1x1/2-inch
•
Veg. oil for frying (approx. 3-4 cups)
•
1 tbsp white granulated sugar
•
1 tsp brown sugar
Directions:
Cut plantains to size and layout.
Mix together white and brown sugars and sprinkle over plantains.
Shallow fry over high heat, fry plantains 2-3 minutes per side or until golden brown
