Stuffed Pepper Salsa Eggs
For some heat, add jalapeno powder! Makes 2 servings.
Ingredients:

2 bell peppers, cleaned
•
1 cup liquid egg substitute
•
½ tsp garlic powder
•
¼ tsp pepper
•
¼ cup mild low sodium salsa
•
1 cup baby spinach
•
1/3 cup diced mushrooms
Directions:
Preheat oven to 400 and prepare 9x9 dish.
Mix egg substitute, garlic powder, pepper, and salsa.
Place peppers inside dish and fill with liquid eggs, baby spinach, mushrooms
Pour 1/3-1/2 cup water around them.
Bake 30 minutes.
