Chilli with Chorizo

A Mexican-style dish that you can put together in minutes and enjoy the spicy flavours at the end of the day. It's quite a rich sauce, so you'll need the bread to soak it up - delicious!

Serves 1

100 g/4 oz chorizo, cut into chunks
1 small onion, chopped or 30 ml/2 tbsp frozen diced onion
400 g/14 oz/1 large can chopped tomatoes
½ x 400 g/14 oz/large can blackeyed or pinto beans, rinsed and drained
Salt and freshly ground black pepper


  1. Put all the ingredients into the slow cooker and mix well.
  2. Cover with the lid and cook on Low for about 2 hours until rich and thick.
  3. Serve with guacamole, soured cream and crusty bread to mop up the sauce.

This sauce also works well with meatballs.
