Comforting Turkey Casserole

You can vary the ingredients to suit what you have in the cupboard so this is a great basic recipe, especially good for winter fare.

Serves 2

225 g/8 oz diced turkey breast
200 g/7 oz/1 small can chicken broth
1 small onion, chopped or 30 ml/2 tbsp frozen diced onions
6 button mushrooms
5 ml/1 tsp dried thyme
A pinch of celery seeds
30 ml/2 tbsp frozen peas
200 g/7 oz/1 cup frozen mixed vegetables
Salt and freshly ground black pepper


  1. Combine all the ingredients except the peas, vegetables, salt and pepper, cover with the lid and cook on LOW for 3-4 hours.
  2. Turn the slow cooker to High and add the remaining ingredients, seasoning to taste.
  3. Cook for a further 30 minutes until cooked through.
  4. Serve with new potatoes.


Second serving
Reheat the casserole in a flameproof dish until piping hot, top with mashed potato and grated cheese and brown under a hot grill for a few minutes until crisp.
