3 tablespoons unsalted butter
2 medium red onions, thinly sliced
and separated into rings
3 cloves garlic, thinly sliced
1 teaspoon cumin seeds
Salt to taste
Freshly ground black pepper
to taste
½ cup shredded Gruyère
or Swiss cheese
1 cup fried croutons
Heat the butter in a large heavy skillet over medium-high heat. Add the onions, garlic and cumin and sauté till the onions are caramelized. Stir in 2½ cups water, salt and pepper and bring the soup to a boil. Reduce the heat to low, cover and simmer for 3 to 4 minutes. Add the cheese and stir, making sure the soup does not boil. Remove from heat, ladle into bowls, garnish with croutons and serve.
