APPLE CIDERFLAVOURED CHICKEN

Comfort food at its best! This chicken recipe features a mouth-watering combination of the fruity flavour of apple cider and the citrusy kick of oranges. Pair this with a side of green beans and warm bread to make a simple and satisfying supper.

SERVES 4

2 cups apple cider

1 tablespoon cayenne pepper

2 cloves garlic, minced

1 pound chicken breast,

cut into strips

Salt to taste

Freshly ground black pepper

to taste

2 tablespoons vegetable oil

2 oranges, segmented

Season the chicken with salt and pepper and let it rest at room temperature for about 15 minutes.

In a medium saucepan, combine the apple cider, cayenne pepper and garlic and cook on medium-low heat until the liquid reduces to a quarter of the original quantity.

Heat the oil in a heavy-bottomed pan on medium-high heat and cook the chicken for 3 minutes on each side or until almost done.

Add the cider mixture and continue to cook until the flavours are well combined, the chicken is tender and the mixture is almost dry, about 6 to 8 minutes. Garnish with orange segments and serve hot with a salad.
