Chicken is baked in a marinade of rich honey, smoky, fiery paprika in this delicious and addictive dish, which helps develop the complex flavours and aromas. The tender flesh and the crisp golden crust from the nutty walnuts give the chicken a wonderful texture.
2 pounds chicken drumsticks,
skinned
Juice of 1 lemon
Salt to taste
Freshly ground black pepper
to taste
2 teaspoons paprika
1 tablespoon cumin powder
3 tablespoons honey
½cup walnuts
2 tablespoons vegetable oil
Season the drumsticks with lemon juice, salt and pepper and set aside.
Take the paprika, cumin, honey, walnuts and oil in a blender and process to a coarse mixture. Rub this mixture on the chicken, then cover and refrigerate it for 4 hours.
Preheat the oven to 350°F.
Place the drumsticks on a flat baking tray and bake in the oven until cooked through and evenly browned, about 25 to 30 minutes, turning them halfway for even cooking.
Serve hot with a salad of your choice and your favourite chutney.
